Fresh and Good!


Perfect for an outdoor lunch (of course accompanied by your most raucous friends and plenty of good wine!)
Tuna Nicoise Salad

You'll need

large eggs (we always go for duck eggs!)
french beans
black olives
mixed leaves (we like lambs lettuce, rocket, baby spinach...)
Good tuna (go for a jar instead of a can, or fresh if you prefer)
Sunblush tomatoes (juicy cousin of the stronger sun dried!)

Method

Mix and eat...

I LOVE salad nicoise, for a million reasons, not least for how beautiful it looks laid out on a platter. I sear ahi tuna cubes, if I'm feeling very fancy or just use my standard tuna salad recipe. Looks yummy!

I really want to try making it with fresh tuna this summer when I'm in Italy, the quality of the fresh tuna here is okay but its sooo expensive I just can't bring myself to buy it!

I really like tinned tuna, and so the upper end of the jar/tin variety really works for me!
