150gms White chocolate
150 self raising flour
150 gms caster sugar
2 peaches, destoned, skinned and mulched in processor.
Melt the chocolate and the butter together in a heavy pan, then stir in the sugar and eggs, and finally the flour. Add the peaches then, I pulse mine in the processor so there are some lumps of peach left in the puree.
Bake in a hot oven, 190c or so, for about 20-25 minutes or until a skewer comes out clean.
These are very moist cupcakes, and quite sweet so a cream cheese icing is the best. I make mine with 100gms of melted butter, 8 ounces of cream cheese, tsp vanilla extract and 500gms icing sugar. Give or take on the measurements though because I do it by eye! I also use an electric mixer on high speed, adding the cheese to the butter and whisking the sugar in bit by bit. Taste as you go!!
